Preparation

Step 1

2 cups Graham cracker crumbs
1/4 lb butter or more melted
1/2 cup sugar
1 tsp cinnamon

Leave about 1 cup of crumbs out if you like. Grease pan and press into sides and bottom.

Filling:
1 lb. cream cheese (2-8oz. packages)
8 eggs separated
1 pint sour cream
1 tsp. vanilla
juice of one lemon
1 cup of sugar

Cream the cheese well. Add the sour cream, sugar, yolks, vanilla and lemon juice. Beat until smooth. Fold in beaten egg white. Pour filling. Bake 300 degreees 1 hour. Leat stand in closed oven for one hour additional. Refrigerate.
