Peanut Butter Pops

Ingredients

  • 2 cups smooth peanut butter
  • 3/4 cup corn syrup
  • 1/4 c. non-whipped heavy cream
  • 3 1/4 c. whipped heavy cream
  • 6 large egg whites
  • 3/4 cup sugar
  • 2 tsp. kosher salt
  • Chocolate Dip
  • 1 cup cocoa butter
  • 1 cup 58% chocolate
  • crushed sugar cones or crunchy cookies

Preparation

Step 1

In a bowl, blend peanut butter and corn syrup. Add non-whipped cream and blend. Then fold in the whipped heavy cream.

In a separate bowl, pour 6 large egg whites. Whip until frothy. Add the sugar.

Fold whites into the peanut butter mix. Then whip mixture with a whisk. Transfer to a pastry bag. Squeeze into a small mold pan. Tap pan to remove air bubbles. Freeze for 4 hours.

Chocolate Dip:

Melt the cocoa butter and chocolate and combine. Add the crunchies (sugar cones or cookies). Take out the pops from the freezer and dip into the chocolate sauce.
