Musroom Artichoke Chicken and Rice

Ingredients

  • RICE:
  • 4 chicken breasts
  • 1 can chicken broth
  • 2 tablespoons flour
  • 1 jar of marinated artichokes (drained)
  • 1/2 stick butter
  • 1/2 pound fresh mushrooms
  • salt, pepper, and paprika to taste
  • 2 cups of rice
  • 1 stick of butter
  • 2 cans beef consomme
  • 1 can beef broth
  • 1 small onion chopped

Preparation

Step 1

Sprinkle/season chicken with salt, pepper, and paprika.

In saucepan, lightly brown chicken in a small amount of butter.

Remove chicken to baking dish.

To saucepan, add remaining butter and flour, stirring to brown the flour.

Add chicken broth and fresh mushrooms.

simmer for 5 minutes.

Pour sauce over chicken, add artichokes, place baking dish in preheated 350 degree oven for 45 minutes.

RICE:

Combine rice, butter, consomme, and broth and onion in baking dish.

Place in 350 degree oven for 45 minutes.
