Sweet Potato Pineapple Casserole

To be prepared in K30132 KitchenAid 5-qt. 325-watt 10-speed stand mixer and baked in K27938 Temp-tations Old World 16-piece oven-to-table set (9'' x 13'' baking dish).

Ingredients

  • Topping:
  • 16 medium sweet potatoes, cut in half and quartered (equal to 10 cups cooked and mashed)
  • 2 cups crushed pineapple, drained
  • 1 1/2 cup sugar
  • 6 Tbsp. butter, melted
  • 4 eggs
  • 2 tsp. salt
  • 2 tsp. ground cinnamon
  • 1/4 tsp. ground allspice
  • 1/4 tsp. ground nutmeg
  • 1/2 cup brown sugar
  • 2 Tbsp. butter, melted
  • 1/3 cup all-purpose flour
  • 1 cup pecans or walnuts, chopped

Preparation

Step 1

Preheat oven to 350F (175C). Lightly grease a 9" x 13" baking dish. In a large stock pot, boil sweet potatoes whole until soft (approx. 40 minutes). Remove skins. With a flat beater of an electric mixer, mix sweet potatoes, crushed pineapple, sugar, butter, salt, and spices. Stir in one egg at a time. Pour into baking dish. Mix topping ingredients together and sprinkle over top of casserole. Bake 30-40 minutes.
