Ingredients

  • 1/4

    c. olive oil

  • 1/2

    lb. ground beef (7% fat is best)

  • 1

    large onion, chopped

  • 6

    garlic cloves, minced

  • 10

    c. low salt chicken broth

  • 1

    can cannellini beans, drained

  • 1

    can kidney beans, drained

  • 4

    stalks celery, thinly sliced

  • 2

    carrots, diced

  • 1/2

    c. minced Italian parsley

  • 1/2

    c. minced basil leaves

  • 2

    large ripe tomatoes, chopped

  • 2

    tbl. tomato paste

  • 1

    tsp. dried oregano

  • 1

    tsp. crushed red pepper flakes

  • 1/2

    lb. ditalini pasta

  • salt and pepper to taste

Directions

In 5 qt. kettle, saute meat, onions and garlic in olive oil. Add remaining ingredients. Stir well. Bring to boil, cover and simmer 30-40 minutes. Adjust seasonings as needed.
