Ingredients
- 1/4 c. olive oil
- 1/2 lb. ground beef (7% fat is best)
- 1 large onion, chopped
- 6 garlic cloves, minced
- 10 c. low salt chicken broth
- 1 can cannellini beans, drained
- 1 can kidney beans, drained
- 4 stalks celery, thinly sliced
- 2 carrots, diced
- 1/2 c. minced Italian parsley
- 1/2 c. minced basil leaves
- 2 large ripe tomatoes, chopped
- 2 tbl. tomato paste
- 1 tsp. dried oregano
- 1 tsp. crushed red pepper flakes
- 1/2 lb. ditalini pasta
- salt and pepper to taste

Step 1
In 5 qt. kettle, saute meat, onions and garlic in olive oil. Add remaining ingredients. Stir well. Bring to boil, cover and simmer 30-40 minutes. Adjust seasonings as needed.
