Ingredients

  • Sauce:
  • 1 small onion, chopped
  • 1/2 c. canned tomatoes
  • 1 small green pepper, chopped
  • 1 small clove garlic, minced
  • 2 tbl. olive oil
  • salt, pepper to taste
  • 1/4 c. wheat germ (optional)
  • leftover chicken, ham or roast beef
  • Omelet:
  • 3 eggs
  • 2 tbl. water
  • 1/4 tsp. salt
  • pepper to taste
  • 1 tbl. margarine

Preparation

Step 1

Combine sauce ingredients in a sauce pan. Bring to a boil, then simmer for 10 minutes.

Combine the omelet ingredients. Melt the margarine in an 11" fry pan or omelet pan. Pour in the egg mixture and cook. Before folding, fill the omelet with half of the sauce. Fold the omelet. Put on serving plate. Top with remaining sauce.
