Ingredients

  • Sauce:
  • 1 med. onion, chopped
  • 2 garlic cloves, minced
  • 2 tbl. olive oil
  • 1 lb. lean (7% fat) ground beef
  • 2 14 oz. cans Italian tomatoes
  • 1 can tomato paste
  • 1 c. water
  • 1/2 c. wheat germ (optional)
  • salt to taste
  • 1/4 tsp. cayenne pepper
  • 1 tsp. sugar
  • 1 tsp. dried basil
  • 2 bay leaves
  • Lasagne:
  • 8 oz. lasagne noodles
  • 1 lb. ricotta cheese
  • 8 oz. whole mozzarella cheese
  • 1/2 c. grated Parmesan cheese
  • Lighten it up:
  • Replace the ground beef with Jenny-O Hot Italian Turkey Sausage; don't add spices (including onion and garlic) until you taste the cooked turkey. Then add as needed. Use part-skim ricotta and part-skim mozzarella.

Preparation

Step 1

Brown onion and garlic in oil. Add meat and cook until brown. Drain off fat as needed. Add remaining sauce ingredients and simmer uncovered for 45 minutes. Remove bay leaves.

Cook noodles and drain. Arrange in lasagne pan in order given: noodles, ricotta, mozzarella, sauce, Parmesan. Repeat with another layer. Bake at 325 for 45 minutes.
