Karen's Black Bean Salad

Ingredients

  • 2 cans black beans- rinsed and drained
  • 1 can white corn - rinsed and drained
  • 1/4 cup green pepper - diced
  • 1/4 cup red pepper - diced
  • 4 green onions - diced
  • 1 mango - cubed
  • 1 avocado - cubed
  • 1/4 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar

Preparation

Step 1

Mix dressing separately, add to all other ingredients. Chill.
