Baked Eggs and Bacon in Toast Cups

Ingredients

  • 6 slices white bread, crust removed
  • 6 large eggs
  • salt and pepper
  • 3 slices bacon, cooked and crumbled
  • 1/2 cup shredded cheddar cheese

Preparation

Step 1

1. Heat oven to 350F. Spray 6 muffin cups and both sides of trimmed bread slices lightly with non-stick spray. Press one slice into each cup so that corners are over edges of cup. Bake 5-6 mins, or until lightly toasted. Remove from oven.

2. Break one egg into each cup. Season with salt and pepper. Sprinkle eggs with bacon and cheese. Bake 15-20 mins, or until eggs are set.
