RUM CAKE

Ingredients

  • glaze:
  • 1 cup chopped pecans or walnuts
  • 1 (18-1/2 oz.) package yellow cake mix
  • 1 small package instant vanilla pudding
  • 4 eggs
  • 1/2 cup cold water
  • 1/2 cup oil
  • 1/2 cup dark rum
  • 1/4 pound butter
  • 3/4 cup water
  • 1 cup sugar
  • 1/2 cup dark rum

Preparation

Step 1

Preheat oven to 325 degrees. grease and flour 10" tube pan or 12 cup Bundt pan. Sprinkle nuts over bottom of pan. Mix cake mix, pudding eggs, water, oil and rum. Mix well. Pour batter over nuts. Bake for 1 hour. Cool. Invert on serving plate.

Glaze:

Melt butter in pan. Stir in water and sugar. Boil 5 minutes, stirring constantly. Remove from heat. Stir in rum. Prick top of cake. Drizzle and smooth glaze over top and sides. Allow cake to absorb glaze. Repeat until all glazed is used.
