Beef (Coconut beef curry)

Ingredients

  • 1 T veg oil
  • 2 lb stew beef
  • 2 onions
  • 2 cloves of garlic, minced
  • 2 T paprika
  • 1 T ground cumin
  • 2 t curry paste or 1 T powder
  • 1 t cinnamon
  • 4 medium potatoes chopped
  • 1 lb baby carrots
  • 1 can (14 oz) coconut milk
  • 2 T tomato paste
  • 1 t salt
  • 1/2 cup dried apricots sliced

Preparation

Step 1

Heat oil over medium high heat in large nonstick skillet
In batches, cook beef strips for 2-3 minutes or until browned. Add onions, garlic, paprika, cumin,curry and cinnamon Saute for 2 min or until fragrant
Transfer mixture to 14-24 cup slowcooker, stir in potatoes, carrots,coconut milk, tomatoe paste,salt and 1/2 cup of water
Cook covered on low for 8 to 10 hours or high for 4-6 hours or until bubbling and vegetables are tender. Stir in apricots, cook for 15 more minutes
