Ingredients
- 4 eggs
- 2/3 C sugar
- 1/2 tsp salt
- 1/4 tsp nutmeg
- 1 tsp vanilla
- 2 1/4 C milk, scalded
- 3 1/2 oz. coconut
- 8 " pie shell unbaked

Preparation
Step 1
Preheat oven to 350 degrees. Put eggs, sugar, salt, nutmeg, and vanilla into blender, cover, and process at whip until sugar is dissolved and eggs are lemon-colored. Add coconut and beat until mixed. Pour into a pie shell and bake for 30 minutes or until a silver knife is clean. After pie is cool, we cover with aluminum and refrigerate.
