Sweet Potatoe Casserole

Ingredients
- 2 large sweet potatoes, peeled and cut into 1" chunks
- 1 large russet potato, peeled and cut into 1" chunks
- 1 large egg
- 2 egg whites
- 2 tbsp margarine, melted and divided
- 1/8 tsp ground nutmeg
- 1/8 tsp salt
- 1/8 tsp black pepper

Step 1
Spray a shallow baking dish. Set aside. In a large saucepan, combine sweet potatoes, russet potato and cold water to cover. Bring to a boil over high heat, reduce to medium and cook until potatoes are tender, about 15 minutes. Drain and cool slightly. Preheat over to 400 degree. Using an electric mixer set on medium speed, beat potatoes until smooth. Beat in egg and egg whites. 1 tbsp margarine, nutmeg, salt and pepper. Spoon potato mixture into a pastry bag fitted with a large star tip. Pip potato mixture into prepared dish. Drizzle remaining margarine over top. Bake casserole until heated through and top is golden, about 20 minutes.
