Ingredients
- 1 cup mixed roasted nuts (with some extra pecans in the mix)
- 1/4 cup liquid sweetner (agave or honey)
- Pinch of cinnamon
- 1 teaspoon of vanilla extract
- Add 3 to 4 cups of ice
Preparation
Step 1
1) Place all ingredients into the Vitamix container in the order listed and secure lid.
2) Select Variable 1.
3) Turn machine on and increase speed to Variable 10, then to High, using the tamper to press the ingredients into the blades.
4) In about 20-25 seconds (blending should take no longer than 60 seconds), the sound of the motor will change and four mounds should form.
5) Stop machine. Do not over mix or melting will occur. Serve immediately, and top with extra pecans if you wish.
Tips
- Use the tamper immediately after turning your Vitamix to High speed. After ice is pushed in, gently keep tapping the top of the ingredients so the mixture is continually moving. After mixture starts to flow freely and the four mounds form, stop the machine.
- Make this recipe directly after making nut butter in your Vitamix machine. It’s fantastic for “cleaning’ the nut butter off the blades. (Add slightly less than 1 cup of roasted nuts when making the recipe with nut butter)
