Garlic marinated skirt steak

Ingredients

  • 1/2 c. chopped parsley
  • 2 cloves garlic, minced
  • 1/2 c. olive oil
  • 1/4 c. sherry
  • 1 tsp. pepper
  • 1/2 tsp. salt
  • 1-2 lbs. skirt steak

Preparation

Step 1

Combine the first 6 ingredients in a shallow non-reactive bowl. Cut the steak into serving size pieces. Place meat in the marinade; cover and refrigerate 30 minutes or longer.

To cook, remove the steaks from the marinade (discard marinade). Grill or broil until medium rare.
