Ingredients
- 2 large eggs
- 2/3 cup packed dark brown sugar
- 1 1/2 cup mashed, cooked sweet potatoes (about 1 lb)
- 1/2 teaspoon salt
- 1 teaspoon ground allspice
- 1 tablespoon lemon juice
- 1 cup evaporated milk
- 1/2 cup chopped pecans (optional)
- 1 unbaked 9" pie shell

Preparation
Step 1
Heat oven to 450 degrees. Beat eggs with sugar in large bowl. Add sweet potatoes, salt and allspice; beat well. Stir in lemon juice, milk and pecans. Pour into pie shell; bake 15 minutes. Turn oven to 325 degrees and bake 30 minutes, or until done. Cool.
