Ingredients

    lbs. ground pork

  • 1

    tablespoon salt

  • 1

    tablespoon ground fennel seed (start with whole seeds)

  • tablespoons sweet paprika

  • 1

    tablespoon maple syrup

  • 3

    tablespoons red wine vinegar

Directions

Mix all ingredients. Best if you let it rest for 12 hours in the refrigerator before cooking, but not necessary.
