Ceviche with Scallops

Ingredients

  • 10 LG scallops,washed
  • 1/2 cup lemon juice
  • 1 1/2 tbsp sunflower oil
  • 1 1/2 tbsp chopped shallot
  • 1/2 tbsp chopped tarragon
  • 1/2 tbsp chopped dill
  • 1/2 tbsp chopped chives
  • 1/2 tbsp chopped parsley
  • lemon wedges to garnish

Preparation

Step 1

Put the scallops into a bowl and pour the lemon juice over them.Cover with plastic wrap and chill
for 24 hours,stirring occasionally.
When you are ready to serve,drain the lemon juice from the scallops and stir in the oil.Add the shallot and herbs and mix well.Garnish with lime wedges.Serve with brown bread if you like.
