Ingredients

  • 1 Pillsbury refrigerated pie crust
  • 1/2 lb. ground beef
  • 1/2 cup chopped onion
  • 1/4 cup chopped green pepper
  • 1 or 2 sliced Zucchini
  • 1 tbps. flour
  • 1 1/2 cups shredded cheddar cheese
  • 2 plum tomatoes
  • 3 eggs
  • 1 tbsp. dijon mustard
  • 1 cup half-n-half
  • salt, pepper

Heat Oven 400

Make pie crust according to directions on package using a 9" pie plate. Do not prick pie crust. Partially bake shell 7 minutes. remove from oven and immediately press down bubbles with back of spoon. reduce oven to 350.

In 10" skillet, cook ground beef, onion and bell peppers over medium high heat, until beef is cooked. Stir in zucchini and continue to cook until zucchini is soffened. Remove from heat, stir in flour and pepper.

Layer beef mixture, cheese and tomatoes in baked shell, with tomatoes being on top of pie. In small bowl, beat eggs, mustard, half-n-half and salt until smooth. Pour over mixture.

Bake at 350 for 40 to 45 min. or until knife inserted in center comes out clean. Let stand 10 min.
