  • 1/4 lb. Gorgonzola, room temperature
  • 1/3 c. milk
  • 3 Tbsp. butter
  • 1/2 c. heavy whipping cream
  • 1/3 c. parmesan
  • 1 lb. pasta (gnocchi)

Step 1

Put gorganzola, milk, butter, and 1 or 2 pinches of salt in pan. Heat over low flame. Stir with wooden spoon, mashing the cheese with the back of the spoon and, as it begins to dissolve, incorporating in with the milk and butter. Cook for a minute or two, or until the sauce has a dense, creamy consistency. Take off the heat until you are ready to add to the pasta.
Shortly before the pasta is cooked, add the heavy cream to the sauce and stir it over medium-low until it is partly reduced.
Add the cooked and drained pasta, and toss. Add the grated paremesan and toss well.
Serve immediately with grated cheese on the side.
