Ingredients

  • 8 Tbsp. butter
  • 1 1/3 c. flour
  • 1/4 c. sugar
  • 1/2 lb. pitted dates or apricots
  • 2 eggs
  • 1 c. light brown sugar
  • Pinch salt

Preparation

Step 1

Heat oven to 350. Grease an 8-inch square pan.
Combine butter, 1 c. flour and sugar. Mix until pebbly and crumbly. Press into pan. Bake 15 min. or until fully cooked.

If fruit is very dry, stew in water 5 or 10 min. Drain. Combine in a bowl with eggs, brown sugar and remaining flour and salt.

Pour fruit batter over crust. Bake until lightly browned, about 30 minutes. Cut into squares and serve.
