Peanut Brittle Cookies

Ingredients

  • 1/2 cup Shortening
  • 1/2 cup Brown Sugar
  • 1/4 cup Granulated Sugar
  • 1 tbsp Vanilla
  • 1 Egg
  • 1 1/4 cup Flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 pkg (300g) peanut butter chips, divided
  • 1 cup toffee bits
  • 3/4 cup unsalted peanuts

Preparation

Step 1

-Preheat oven to 350F.
-Line baking sheets with parchment paper
-In large bowl beat shortening with sugars and vanilla until creamy
-Beat in egg
-Add flour, baking soda, and salt
-Stir in 1 cup peanut butter chips, all toffee bits and all peanuts.
-Drop mixture by rounded tablespoons onto prepared baking sheets about 2" apart.
-Bake for 10-12 minutes until deep or golden brown and just set
-cool
-melt remaning peanut butter chips and drizzle over cooled cookies
