Ingredients
- 2 lbs flat iron steaks
- 2 tbs extra-virgin olive oil
- 1 onion, thinly sliced
- 6 tbs cold unsalted butter, diced and divided
- 1 tbs garlic, minced
- 1 tsp dried oregano
- 1/4 cup tomato paste
- 2 1/2 cups dry red wine

Step 1
1.) Heat grill to med-high. Season steaks with salt and freshly ground black pepper; drizzle with oil.
2.) Grill steaks 5 minutes per side for med-rare or to desired doneness; transfer to cutting board. Tent steaks with foil; let rest 10 minutes before slicing across grain.
3.) In a saucepan over med-high heat, cook onions in 2 tbsp butter 5 minutes; season with salt. Add garlic and oregano. Cook 30 seconds or until fragrant.
4.) Stir in tomato paste. Cook 2 minutes, stirring. Whisk in wine. Let simmer 10 minutes, or until reduced by half. Strain sauce; discard solids. Return sauce to pan. Over medium heat, slowly whisk in 4 tbsp butter. Season to taste; serve with sauce.
