Ingredients

  • 1 1/2 red potatoes, cubed
  • 1/2 cup red onions, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup bottle light Italian dressing
  • 1/4 cup light mayonnaise
  • 1 tsp fresh oregano, chopped
  • 3 hard-cooked eggs, chopped

Step 1

1.) In a pot, bring potatoes and enough salted water to cover to a boil. Let cook 8 minutes or until tender. Drain and rinse.

2.) In a bowl, blend next 5 ingredients. Add potatoes and eggs; toss to coat.
