Mexican Lasagna

Ingredients

  • 1 lb. ground beef, or turkey
  • 1 package taco seasoning
  • 1 (14 oz) can diced tomatoes
  • 12 6-inch corn tortillas (1 package)
  • 1 cup Salsa
  • Cheese – Mexican Mix

Preparation

Step 1

Preheat oven to 350 degrees.

In large skilled, brown ground meat over medium-high heat; drain. Stir in the diced tomatoes and taco seasoning. Mix together

In 13x9 baking dish, line the bottom with 6 of the corn tortillas. Spoon the meat mixture into the dish. Top with the remaining 6 tortillas. Spread salsa over the tortillas and sprinkle with cheese.

Bake at 350 degrees for 20-30 minutes, or until cheese is melted and bubbly.

Serve with rice and vegetable of your choice.
