White Chocolate-Raspberry Parfaits

  • 1 pkg (3 oz) raspberry gelatin
  • 1 cup fresh raspberries
  • 1 pkg (1 oz) fat-free, sugar-free white-chocolate pudding mix
  • 1 cup low-fat whipped topping
  • 1/2 tsp orange zest (optional)

Step 1

1.) Rest six 1-cup capacity red wine glasses on rim of 2 loaf pans. Prepare raspberry gelatin according to package directions, using quick-gel method. Stir in raspberries. Divide evenly among glasses. Chill 2 hours. Prepare white chocolate pudding mix according to package directions. Fold in whipped topping and orange zest. Divide mixture evenly among glasses. Chill 4 hours.
