Ingredients

  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 tablespoon peanut butter
  • 1 garlic clove, crushed
  • 1/2 teaspoon ground ginger
  • 4 (10-inch) flour tortillas
  • 1/2 cup chopped fresh basil
  • 4 large red cabbage leaves, shredded
  • 8 thin slices cooked turkey
  • 1 cup green bell pepper slices

Step 1

1.Mix mayonnaise, lime juice, peanut butter, garlic and ginger in a small bowl.

2.Spread mayonnaise mixture on one side of each tortilla. Top each with 2 tablespoons basil, one-fourth of the cabbage, 2 turkey slices and 1/4 cup bell pepper slices. Roll to enclose filling.

3.Wrap each tortilla roll tightly in plastic wrap. Chill until serving time. Cut each roll in half before serving.
