*CHICKEN (Roasted Povencal)

Step 1

Take a 3.5 to 4 lb whole chicken. For rub combine 2 minced garlic cloves, 1/4 c herbes de Provence, 1/4 c olive oil, 1 tbsp kosher salt, 1/2 tsp pepper. Mix well and rub all over and inside chicken. Place on wire rack in roasting pan and put in pre heated 475 degree oven. Cook for 30 minutes until skin browns, lower heat to 350 and cook an additional 30 min until interal temp reads 165. Let reast 10 minutes. WE TRIED THIS 5/20/13 AND IT WAS VERY GOOD. KIDS LOVED IT. MAYBE COOK A BIT LONGER AND ALSO SERVE WITH LEMON WEDGES.
