Ingredients

  • 1 CUP WHITE SUGAR
  • 1 1/2 CUPS FLOUR (C & P)
  • 1/2 CUP MILK
  • RIND OF 1 LEMON (GRATED)
  • 2 EGGS
  • 1 TSP. BAKING POWDER
  • 6 TBSP. BUTTER
  • 1/2 TSP. SALT
  • 1/2 CUP WALNUTS (OPTIONAL) I USE ONLY PECANS

Step 1

MIX ALL DRY INGREDIENTS IN SMALL BOWL. CREAM BUTTER, SUGAR AND EGGS. ADD DRY INGREDIENTS AND MILK ALTERNATELY THEN LEMON RIND AND NUTS. LINE LOAF PAN WITH FOIL (OR BAKING PAPER). BAKE AT 350 DEGREES FOR 1 HOUR. MIX LEMON JICE AND 1/3 CUP SUGAR TO SYRUP. POUR OVER CAKE WHILE STILL HOT.
COOL CAKE IN PAN THEN REMOVE FOIL AND WRAP IN FRESH FOIL FOR STORING.
