White Bean Spinach & Basil Hummus

Ingredients

  • 1 can 14 oz can, white beans, drained and rinsed
  • 2 cloves garlic
  • 1/4 c green onions, chopped
  • 1/2 c baby spinach
  • 1/4 c fresh basil
  • 1/4 c pine nuts
  • 2 T olive oil
  • 1 t lemon juice
  • 1 t pepper
  • 1/2 t Sea Salt

Preparation

Step 1

In a food processor add beans, garlic, green onions, spinach, basil and pine nuts. Give it a good pulse, and add in olive oil, lemon juice, salt and pepper.
Pulse until completely smooth. Taste and adjust seasonings or olive oil if needed.
Place in a bowl and drizzle with a tad more olive oil and pine nuts. Serve with whole wheat pita chips, crackers, or use as a spread with sandwiches!
