Curried Polenta

Ingredients

  • 4 cups whole milk
  • 1 cup yellow polenta or corn meal
  • 1/2 tsp curry powder
  • 1/3 cup shredded parmigiano-reggiano
  • 1/2 cup seeded, diced tomato
  • 1/3 cup chopped scallion greens
  • salt and pepper to taste

Preparation

Step 1

Bring milk to a boil in a saucepan over medium heat.

Combine polenta and curry powder and whisk into milk. Cook mixture, whisking contantly, until thick and smooth, 4-5 minutes. Remove pan from heat and stir in cheese, tomatoes, and scallions; season with salt and pepper.
