Cilantro Ranch Dressing

One of the things I am liking most about being home is the availability of cilantro. Yesterday I got 2 for a dollar at the grocery store and wow – I really didn’t remember how much you get in even one bunch. So I whipped up some cilantro ranch dressing with it using Greek yogurt and light mayonnaise.

Ingredients

  • 3/4 cup light mayonnaise
  • 3/4 cup plain Greek yogurt
  • 1 1/2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon paprika
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 slightly packed cups cilantro, stems removed
  • 1/2 small bunch of chives
  • 1/2 - 1 cup milk
  • 1 small clove garlic - minced

Preparation

Step 1

In a food processor, combine all of the ingredients (only add 1/2 cup of milk at this time…you can add more later if you want to thin the dressing).

Once its read it should be sort of green and really yummy.  Add the rest of the milk if you think its too thick, and let it sit in the fridge for a while before serving to let the flavors come out.

Makes 2 cups
