Chicken and Spinach Stromboli

Ingredients

  • 2 (5-6oz) boneless chicken breast, cooked, cut into 1/2 inch cubes
  • 1 (10oz)pkg frozen chopped spinach, thawed, drained and squeezed dry
  • 1 (6oz)jar marinated artichokes, drained, finely chopped
  • 1 garlic clove, finely minced
  • 3 shallots, thinly sliced
  • 4 oz crumbled feta cheese ( 1cup)
  • 2 oz shredded three cheese nacho blend (1/2 cup)
  • 1 tbsp lemon juice
  • 1 (11oz)pkg frozen pizza dough, thawed or homemade pizza dough
  • 1 egg white lightly beaten

Preparation

Step 1

Preheat oven to 375 degrees. Coat a baking sheet with nonstick cooking spray or parchment paper.
In a large bowl combine chicken, spinach, aartichokes, feta, three cheese blend and lemon juice, mix well.
Roll out pizza dough on a lightly floured surface. Spoon chicken mixture on dough to within 1 inch from the edges. Starting at one long edge, roll the dough jelly-rll stlye, pinching ends and seam to seal.
Place dough, seam side down, on baking sheet. Brush top of dough with egg white, cut 5 diagonal slits to vent. Bake 25 to 30 minutes or until golden brown. Transfer to a wire cooling rack and let cool 5 to 8 mins before slicing.
