Funnel Cakes

  • 1 egg beaten
  • 2/3 cup milk
  • 1 tsp. baking powder
  • 1 1/4 cup flour
  • 2 Tbsp. Splenda
  • 1/4 tsp. salt
  • Oil for frying
  • Cinnamon or powdered sugar or sugar free fruit preserves for topping.

Preparation

Step 1

Mix egg and milk. Sift dry ingredients and gradually add to milk mixture. Beat until smooth.
Heat oil in frying pan. Pour batter through a small funnel into oil to make the funnel cake. Fry until golden brown - about 1 minute each side. Flip and brown the other side. Remove from oil and drain on paper towels. Serve immediately while still warm.
