Sausage Egg & Vegetable Muffins

  • 1/2 lb. Ground Sausage
  • 4 oz frozen broccoli florets chopped
  • 1/2 cup shredded cheddar cheese
  • 12 eggs
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 12 parchment wrappers

Preparation

Step 1

Preheat oven to 350 degrees
Heat skillet and brown sausage.
In a microwave bowl, cook chopped broccoli florets for 4 mins. until thawed, then drain.
Place parchment wrappers in muffin tins
In a large bowl, combine, sausage, broccoli, eggs and cheese. Spoon into parchment wrappers, do not overfill - you still need to add the egg mixture.
In another bowl, beat 12 eggs, salt & pepper. Pour over sausage mixture in each parchment wrapper, leaving about 1/4" so they can expand while cooking.
Bake 25 mins. until firm.

Variations:
Instead of sausage, try bacon, Canadian bacon, diced ham. Try red peppers, spinach, zucchini, mushrooms, etc.
