Ingredients

  • 2 skinless boneless chicken breasts
  • 10-oz can condensed cream of mushroom soup
  • 2 tbsp water
  • 2 tbsp sherry (optional)
  • 1 tbsp dijon mustard
  • 8-oz pkg sliced mushrooms,about 4 cups
  • 2 peppers,preferably different colours
  • 2 green onions
  • 1 tsp dried tarragon
  • 1/2 cup light sour cream
  • Pinches of salt & pepper

Preparation

Step 1

Slice chicken into thin strips. In a large saucepan set over medium heat,stir soup with water,sherry and dijon until hot,2 to 3 min. Add chicken and mushrooms. Cover. Reduce heat to medium low.
Core and seed peppers. Coarsely chop. Add to soup. Cover,simmer,stirring occasionally,until chicken is no longer pink, 12 to 15 min.
Meanwhile, thinly slice onions. Once chicken is done,stir in onions and tarragon. Taste and add sour cream,salt & pepper. Great over egg noodles.
