Ingredients
- Mix:
- 3 C. flour (or whole-wheat flour)
- 3 1/2 tsp. baking powder
- 1 1/2 tsp. salt
- 2/3 C. sugar
- 1 C. brown sugar
- 1 1/2 C. butter or shortening
- 3 C. rolled oats
- Making muffins:
- 1 egg
- 2/3 C. milk
- 3 C. oatmeal muffin mix
Preparation
Step 1
In a large bowl, sift together flour, baking powder, salt and sugar. Stir in brown sugar and mix well. Using a pastry blender cut in butter/shortening until evenly distributed. Stir in oats and mix well. Put in an airtight container. Store in a cool dry place. Use within 12 weeks. Makes about 9 cups of mix.
Preheat oven to 400°F. Grease a muffin tin. Combine all ingredients together. Scoop into muffin tin. Bake for 15-20 minutes.
