Ingredients
- Biscuits:
- 2 2 2 C. flour
- 4 4 4 tsp. baking powder
- 2 1/2 2 1/2 1/2 Tbsp. sugar
- 1/2 1/2 1/2 tsp. cream of tartar
- 1/2 1/2 1/2 C. butter or shortening
- 3/4 3/4 3/4 C. milk
- Gravy:
- 3 3 3 Tbsp. butter
- 3 3 3 Tbsp. flour
- 1/4 1/4 1/4 tsp. salt
- 1 1/2 1 1/2 1/2 C. milk
- 1 1 1 pkg. chip beef, cut-up
- white pepper
Preparation
Step 1
Combine flour, baking powder, sugar, salt and cream of tartar in a large bowl. Using a pastry blender, cut in butter/shortening until mixture is like coarse corn meal. Add the milk and stir until mixed. Let rest 5 minutes. Preheat oven to 425°F. Put dough onto well floured surface and knead gently until dough can be handled. Roll to ½ inch thick. Cut circle and place on ungreased baking sheet. Bake for 10-15 minutes.
Melt butter over low heat; stir in flour, salt and a dash of white pepper. Add milk and stir constantly over medium heat until it thickens and bubbles. Pour over cooked biscuits.
