Cilantro Lime Vinagrette (Costa Vida Style)

Ingredients

  • 2 tomatillos, husked, washed and quartered
  • 1/2 bunch cilantro
  • 2 garlic cloves
  • 1 Tbsp. diced jalapeno, canned
  • 2 limes, juiced
  • 1 Tbsp. sugar
  • 1 C. balsamic vinagrette

Preparation

Step 1

In blender pulse tomatillos, cilantro, garlic, jalapeno, lime juice and sugar. Pulse until well blended. Pour in jar and add balsamic vinagrette. Shake and refrigerate for at least 2 hours.
