Ingredients
- 20 oz. ground chicken/turkey
- 1/4 c. green onions, chopped
- 6 cloves garlic, minced
- 1 Tbsp. minced ginger
- 1 1/2 C. cucumber, seeded and diced
- 1 red bell pepper, diced
- 1/2 C. carrot, shredded
- 1/4 C. cilantro, chopped
- 1/4 C. cashews, chopped
- 1/2 jalapeno or Sriracha sauce to taste
- 2 limes, juiced
- 1 Tbsp. soy sauce
- 1 Tbsp. brown sugar
- 16 lettuce leaves
Preparation
Step 1
Combine chicken, green onions, garlic and ginger. Cover and refrigerate for several hours. Allow to stand at room temperature for 15 minutes prior to cooking.
When ready to cook, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook meat mixture until browning and crumbly. In a small bowl, combine lime juice, soy sauce, brown sugar and sriracha/jalapenos. In a separate large bowl, place cucumber, bell pepper, carrots, cilantro and cashews. When the meat is done cooking add it to the bowl of vegetables. Drizzle with sauce and toss to combine. Serve immediately in leaves of lettuce.
