Oven Browned Potatoes

Ingredients
- 4 or 5 red potatoes
- 1/4 C olive oil
- 1 sprig of rosemary
- salt
- pepper
- 1 C hot water
- 1 beef bouillon cube

Preparation
Step 1
Cut up potatoes into 1 1/2" chunks.
Put olive oil, rosemary, salt & pepper into baggie, shake to coat.
Pour hot water & bouillon cube into 9x13" pan, add potatoes in 1 layer & cover with foil.
Steam in oven for 1/2 hour.
Remove foil, raise oven temp to 400* & bake for another 1/2 hour.
Broth should evaporate.
Stir or flip the potatoes, if not brown enough up the heat to about 450*!& check at 5 minute intervals.
> balsamic vinegar (2 T ) can be added with the oil if you want.
> another version is to use butter, lemon juice (1/2 - 1 lemon) & parsley instead of the rosemary.
a chicken bouillon is good with this.
