Ingredients

  • 1 1/2 lbs Yukon gold potatoes, peeled and cubed
  • 1 head cauliflower (about 1 1/2 lbs), cut into florets
  • 5 scallions, thinly sliced (about 1 cup)
  • 1/2 cup sour cream, at room temperature
  • 1/3 cup grated Parmesan cheese

Step 1

1.) In a large saucepan over high heat, bring potatoes and enough salted water to cover to a boil. Cook 10 minutes. Add cauliflower florets. Cook 10 minutes, or until potatoes and cauliflower are tender. Drain; return potatoes and cauliflower to saucepot.

2.) Meanwhile, in medium skillet coated with cooking spray over med-high heat, cook scallions 3 minutes, stirring occasionally.

3.) Using hand masher or potato ricer, mash potato-cauliflower mixture until smooth. stir in scallions, sour cream and Parmesan cheese until blended. Season with 1 tsp salt and 1/4 tsp ground black pepper. Transfer potato-cauliflower mixture to warm serving bowl.
