My Grandma's Spaghetti Sauce

Ingredients

  • 1-1/2 to 2 pounds chicken thighs, w/skin & bones
  • 1-1/2 pounds ground chuck or 90% hamburger
  • 1 pound hot Italian sausage bulk or in a tube (sometimes I get the large link and slice it)
  • 1 large onion
  • 7-8 garlic cloves, diced
  • 1 quart tomatoes, stewed or diced
  • 1 small can tomato paste
  • 2 small cans tomato sauce
  • 2 small cans sliced mushrooms
  • 2 T. Italian seasoning
  • 1 t. black pepper

Preparation

Step 1

In large pot simmer chicken in 3-4 quarts of water for about 1 hour. Add water if needed. Remove chicken and set aside. In a separate frying pan, brown hamburger, onions, garlic and sausage until meat is no longer pink. Add to water in chicken stock pot, do not drain grease.

Add tomatoes, tomato paste & sauce, mushrooms and seasoning. Simmer for about 45 minutes.

Cut chicken off of bones. Discard bones and skin. Cut chicken into bite sized pieces and return to sauce pot.

Skim off grease and cook down to desired thickness/consistency.
