Red Raspberry Freezer Jam

Ingredients
- 3 cups red raspberries, crushed
- 2 tbs lemon juice
- 1 1/2 tsp mint extract
- 5 1/4 cups sugar
- 1 pouch fruit jell pectin
- 3/4 cups water

Prepare can or freeze jars and lids according to manufacturer's instructions.
Combine red raspberries, lemon juice and mint extract. Stir in sugar and let stand 30 minutes, stirring occasionally. In a small saucepot, combine pectin and water. Bring to a boil and boil for 1 minute, stirring constantly. Add pectin to fruit mixture; stir for 2 minutes. Skim foam if necessary. Carefully ladle into can or freeze jars, leaving 1/2 inch headspace. Adjust caps. Let stand at room temperature until set, up to 24 hours. Label and store in freezer. Makes about 3 8-ounce jars
