Hot 'n' Bothered Chicken

Ingredients

  • 3/4 cup prepared sun-dried tomato dressing,like Newman's Own Lighten Up!
  • 1 chipotle chile in adobo sauce, finely chopped
  • 2 tbsp fresh oregano, chopped
  • 1 tbsp fresh cilantro, chopped
  • 1 whole fryer chicken, cut into serving pieces (about 3 lbs)

Preparation

Step 1

1.) Heat grill med-high. In a small bowl, whisk together sun-dried tomato dressing, chipotle chiles, oregano and cilantro until blended.

2.) In a large resealable plastic bag, combine chicken pieces and 1/2 cup dressing mixture. Let marinate 30 minutes. Remove chicken pieces from marinade.

3.) grill chicken 20 minutes, or until thermometer inserted in meat, not touching the bone, reads 165 Degree F., basting frequently with remaining dressing mixture, turning once. Remove and discard skin before eating.
