Fiesta Cheese Rice

Ingredients
- 3 C uncooked instant rice
- 3 C water
- 1 can (10oz) diced tomatoes with green chillies, undrained
- 1 T chicken bouillon granules
- 3/4 C sour cream
- 1 1/2 C (6oz) shredded cheddar cheese, divided
Details
Preparation
Step 1
In a bowl, combine the rice, water, tomatoes & bouillon; mix well.
Pour into a greased 2 qt microwave- safe dish.
Cover & microwave on high for 10 minutes.
Stir in sour cream & 1/2 C of cheese; mix well.
Sprinkle with the remaining cheese.
Cover & microwave for 1 minute or until cheese is melted.
