Pan-Seared Tilapia w/Almond Butter & Snow Peas

Ingredients
- 3 C. Snow Pea Pods, trimmed
- 4 ) 4-5 oz Tilapia Filets or other whitefish
- 1 tsp all purpose flour
- 1 Tbsp Olive Oil
- 2 Tbsp Butter
- 1/4 C. coarsely Chopped Almonds
- 1 Tbsp fresh snipped parsley

Step 1
Bring lightly salted water to a boling in a large saucepan. Add pea Pods. Cook for 2 minutes. Drain & set aside. Meanwhile, season fish with salt & pepper; sprinkle with flour. Heat a large skillet over medium-high heat. When the pan is hot, remove from heat and add olive oil. Return pan to heat & add fish. Cook fish for 4 to 5 minutes or until easy to remove with spatula. Gently turn fish and cook for 2 to 3 minutes more. Arrange peas on a serving platter; arrange fish on top. Reduce heat to medium. Add butter to skillet. When butter begins to melt; stir in almonds. Cook for 30 to 60 seconds until nuts are slightly toasted-don't let burn! Spoon mixture over fish filets, then sprinkle with parsley.
