Ingredients
- 1 Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
- 2 In 8-inch nonstick skillet, cook mushrooms and onion over medium heat, stirring frequently, about 5 minutes or until tender.
- 3 In large bowl, stir together pasta and spinach. Stir in mushroom mixture. Spread in baking dish. In large bowl, stir remaining ingredients until blended. Pour over spinach mixture.
- 4 Bake uncovered 35 to 40 minutes or until top is golden brown. Let stand 5 minutes before serving.

I thought this was just OK; which really disappointed me. It was on the dry side. I would have enjoyed it more with some kind of white sauce on it. The cheeses are excellent I did have to use regular feta since we could not find tomato-basil one it called for. I added dried basil as well.
If I make it again I'll try to add more of a sauce to it and I will add a meat; either sausage or chicken. But I'm in no hurry.
This was pretty good. The combination of cheeses are superb. However, I most certainly cut the spinach down by one half. It was WAY too much, and I love spinach. When I make it again, I will do just that and increase the onions and possibly add chicken. :)
This recipe is delicious! Very easy to make and my kids LOVED it! The marinara sauce makes this dish complete. Next time I might try drizzling some alfredo sauce over the top to give it an extra zing.
