Ingredients
- 1 1/2 cup all-purpose flour
- 1 1/2 teaspoon cinnamon
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup sugar
- 1 cup raisins (cran-raisins)
- 1 cup canned pumpkin
- 2 eggs, unbeaten
- 3/4 cup vegetable oil
- 1 cup chopped pecans (toasted)
Preparation
Step 1
Mix all dry ingredients including raisins;
stir in pumpkin,eggs and oil.
Spoon into greased and floured muffin tin.
Bake at 400F degrees for 20 minutes
Makes 15 large muffins.
