BRUSSELS SPROUTS WITH GINGER, RED PEPPER & ORANGE

Ingredients

  • 1 3/4 lb (850g) Brussels Sprouts, trimmed
  • 2 tbsp (25mL) butter
  • 1/2 large red bell pepper,cut into small cubes
  • 2 tsp (10mL) finely grated fresh ginger
  • 1/2 cup (125mL) orange juice
  • Salt and freshly ground black pepper to taste

Preparation

Step 1

Bring a large pot of water to a rapid boil. Add the Brussels sprouts and cook until just tender, about 4 to 5 minutes. Drain them well,cool in ice-cold water and drain well again. Place the Brussels sprouts in a bowl and store in the fridge until needed.

When ready to serve,melt the butter in a large skillet set over medium heat. Add the bell pepper and ginger and cook 1 to 2 minutes. Drain any water in the bottom of the bowl of Brussels sprouts, and then add them and the orange juice to the skillet. Increase the heat to medium-heat and cook the sprouts until heated through, and the orange juice has reduced and started to thicken and form a glaze around the Brussels sprouts.

Season with salt and pepper and serve.
